One of the main properties of honey is crystallization. Some time after the honey is pumped out of the hives, the product thickens, large grains are formed - crystals. The term of sugaring usually depends on the type of honey, or rather, on the amount of glucose in the product and the storage temperature. In a cold place, crystals form faster. Some varieties of honey, such as acacia, practically do not crystallize.
