Gelatin forms transparent solutions of light color with a characteristic odor and neutral taste; easily hydrates water, is soluble at temperatures above 30°C and solidifies when the solution is cooled.
Gelatin differs in origin and production method - pork (type A - acid method) as well as in gel strength - from 180 to 280 Bloom (Bloom). The dosage of gelatin in the final product depends on the latter indicator. The higher it is, the lower the dosage and the more expensive the ingredient. The strength of food grade gelatin jelly is determined by Bloom (Bloom). According to Bloom units, food gelatin is divided into the following types: 160, 180, 200, 220, 240, 250, 260, 280.
Getting gelatin with high gel strength (above 260 bloom) is a material-intensive process that requires the use of the most modern technologies and modernized equipment; not all factories can produce such a product.
Another important quality characteristic of pork gelatin is its organoleptic properties: color, solution transparency, taste and smell, which primarily depend on the ingredient production technology (number of purification degrees).
Particle size is an equally important characteristic of gelatin. It determines the rate of dissolution of the ingredient. The choice of a particular fraction is due to the technological features of production: the time and temperature of the ingredient soaking in water, the equipment used, the diameter of the filter sieves installed at the enterprise. Gelatin is produced with a particle size of 6, 8, 18, 20, 30, 40, 50, 60 mesh. Gelatin 8, 20, 30 mesh is in the greatest demand.
Pork gelatin is widely used in many areas of the modern food industry.
